Another high on my list of favorites, although a bit more expensive, is the Le Creuset Stoneware which is a porcelain enamel finish that resists stains. scratches and chipping.
You will not find some items in glass such as cookie sheets which are supplied by makers like Calphon and Kitchenaid, along with many other makers of fine nonstick bakeware sets.
So for the best bakeware set, you will need to determine your personal needs and skills first and then do some research on the bakeware available. As always buy the best you can afford, not so much because it is pretty but rather how long it will last. That is how you save your purchase. Buying a cheap piece of bakeware will not likely make a happy baker. Only the happy baker will deliver those wonderful tasting cookies and bread. Happy baking
Baking Hints For Gluten Free Baking
Gluten Free recipes can be a little intimidating because of all the various flours and somewhat exotic ingredients that are called for in each recipe. Through trial and error I have found some methods that, in the end, saved me money and made my gf lifestyle more enjoyable and less of a hassle.
I think the first thing I noticed when I began my gf quest was all the different flours I was purchasing for every recipe. At one time, I had ten different flours in my cupboard, all with only a cup or two taken out, and I was still purchasing more gluten free flours! Now, you will find many gluten free companies who are making all purpose gluten free flours to replace the various flours called for in gluten free baking. Most of these blends are all very high in starches and low in protein and fiber, which is obviously not beneficial to our health. I worked in my kitchen for over a year to develop all purpose gluten free blends that are higher in protein and fiber and have less starches than most brands currently available. All three of my blends can be used cup per cup in any recipe, ultimately replacing any flours called for in baking and will save you money and time because you will no longer need to purchase flours separately and mix your own blends.
The second thing I noticed when I began eating gf was the lack of flavor. Wheat really does add flavor and texture to our foods and without it food can sometimes be bland. That is why I add millet to one of my blends and the other blend has sorghum. Millet adds a great nutty flavor and creamy texture, not to mention added protein and “good” fat. Sorghum is wholesome and a little more like whole wheat, without the gluten and also adds protein and fiber.
Baking gf does not require missing out on childhood favorites, grandmother’s recipes, or baking with your mother’s cookbook any longer. When you choose a gluten free lifestyle, whether it be because you have been diagnosed with celiac, have a child that is autistic, have skin rashes, an autoimmune disease or just want a healthier lifestyle, you do not need to purchase new cookbooks. I have found that by using my all purpose gluten free flours I can make my grandmother’s sourdough bread, biscuits and gravy using my great grandmother’s recipes, or the chocolate chip cookies my mom always made us when growing up. I just substitute my all purpose gluten free flour for the “regular” flour, cup per cup!
Since gf flours have less taste than wheat flour it is beneficial to add ingredients that have significant flavor. When recipes call for milk or water you can always substitute orange juice, apple juice, almond, soy or coconut milk for more flavor, depending on what your making. Many times when making bread I will add seltzer water or even a diet soda to give it more bubbling action to help the bread be more light and airy. Almond extract or pure vanilla extract are also good additions to help improve flavor as well as cinnamon or any other spice that will enhance what you are making. Buttermilk will add flavor and help to make the product lighter and more moist. Don’t be afraid to experiment in recipes and change them up to add variety to your diet! Gluten free does not have to lack flavor or be boring.
Gluten free flours contain no preservatives so it is vital the flour blends be kept refrigerated or in the freezer. Keeping gluten free bread frozen, once baked, helps to prolong the shelf life as well. I always make sure, when making gf bread, that I slice the bread before putting in the freezer. That way, I just grab the amount I need and the rest can stay in the freezer!
When making gf breads it is important to remove the bread from the pan immediately so the bread does not become soggy. When making cakes it is important to let the cake cool approximately 5 minutes, loosen edges, then remove from pan to cool. Muffins need to be removed from muffin tins approximately 2-3 minutes after removing from the oven so they do not become soggy.
